Text is encoded as UTF-8, so letters outside basic ASCII (é, €, emoji) use 2 to 4 bytes each. Code points list one number per character instead.

Questions people ask
What is “A” in binary?
01000001. Its ASCII and Unicode value is 65, which is 41 in hex.
Why do some characters give several bytes?
UTF-8 uses 1 byte for basic ASCII, 2 bytes for most accented letters, 3 bytes for symbols like € and 4 bytes for emoji.
Can I decode binary with no spaces?
Yes. A long run of 0s and 1s is split into 8-bit groups automatically, as long as its length is a multiple of 8.
